Dark Harbour is our darkest bag: a blend of natural Brazil and wet-hulled Sumatra, taken well into second crack. Heavy, sweet and a little smoky, it is built for espresso and for milk drinks.

Tasting notes: cocoa and molasses

The Brazil half brings cocoa and a nutty sweetness; the Sumatra half adds weight, an earthy depth and the smoky finish. Together they taste of cocoa and molasses, with very low acidity and a thick, lasting crema. A deep roast done properly is bittersweet, never burnt, and that is the line we hold with every batch.

A blend built for milk drinks

Milk softens delicate beans until they disappear. This Brazil and Sumatra blend does the opposite: in a cappuccino, a latte or a cortado, the cocoa cuts through and the cup tastes like hot chocolate with a kick. It is also the bag we recommend for a moka pot and for anyone who simply likes a strong, traditional cup.

How to pull Dark Harbour as espresso

Dose 18 g, aim for 36 g in the cup in 27 to 30 seconds, and keep the water a little cooler than for lighter beans, around 91 °C. Beans taken this far extract fast, so grind slightly coarser if the shot turns harsh. Rest the beans 7 to 10 days after the roast date before pulling shots. Dark Harbour or Ember?

Both are espresso beans. Ember espresso is medium-dark, brighter and nuttier; Dark Harbour is the bolder, darker of the two. Browse the whole range on the coffee page. Sold as whole bean or ground to order, in a resealable 250 g bag.
